Farmer’s Quiche

Ingredients

8 Mini Sweet Peppers, sliced thin
1tbsp. jalapeño pepper,small dice
1/2 cup yellow squash, sliced into thin rounds
1/2 cup zucchini, sliced into thin rounds
2 cups potatoes (raw),peeled shredded
1 1/2 cups egg substitute
1/2 cup low fat sour cream
1/2 cup low fat milk
2 tbsp. low fat mozzarella cheese, shredded

How to Make it

Preheat oven to 400°. Spray a 9 inch pie pan with non stick spray. Place the 2 cups of potatoes evenly aroundthe bottom and sides of pan to form a crust. Place crust in oven for 20-30 minutes or until the crust is golden brown. Cut all of the vegetables and sauté for 3 minutes. Combine egg substitute, sour cream, milk and mozzarella cheese in a bowl. Incorporate the vegetables into the egg mixture and pour into the potato crust. Bake at 350° for 35 minutes. Let the quiche cool before serving.

Mini Sweet Hummus Dip

Ingredients

2 (15oz.) cans garbanzo beans, drained
½ cup tahini
½ cup roasted mini sweet peppers
(remove stems and seeds)
15-20 Mini Sweet Peppers
¼ cup lemon juice
3 garlic cloves
¼ cup parsley
¼ cup green onions, chopped
Salt and pepper to taste

How to Make it

Place garbanzo beans, roasted mini sweet peppers, tahini, lemon juice, garlic, parsley, and green onion in the bowl of a food processor. Blend until smooth, adding water if the mixture is too thick. Add salt and pepper to taste.

Serve with Mini Sweet Peppers whole or halved.

Sautéed Okra with
Mini Sweet Peppers

Ingredients

1 lb. Okra
8 Mini Sweet Peppers
1 small onion, sliced
1 tbsp. garlic, minced
1/2 cup vegetable stock
1 tbsp. cilantro, chopped
2 tbsp. butter
2 tsp. chili powder
Salt and pepper to taste

How to Make it

Trim okra and slice into 1/4 inch rounds. Trim and cut peppers into thin slices. On medium heat, sauté the butter, onion, and garlic for 3 minutes. Next, add okra and cut peppers, cook for 3 minutes. Next, add the vegetable stock, chili powder and fresh cilantro. Continue sauteing on medium heat until the sauce reduces - add salt and pepper to taste, and serve.

Stuffed Mini Sweet Peppers

Ingredients

15-20 Mini Sweet Peppers
½ cup cream cheese
¼ cup goat cheese
1 clove garlic, minced
1 ½ tbsp. fresh basil, chopped
1 ½ tbsp. sundried tomatoes, diced
Salt and pepper to taste

How to Make it

Cut the tops off the peppers and clean out any seeds; set aside. In a small bowl, mix cream cheese and goat cheese together. Add the garlic, basil, sundried tomatoes, salt and pepper. Using a small spoon fill the mini sweet peppers with the mixture and serve.

Mini Sweet Pizza Poppers

Ingredients

8 oz. of Mini Sweet Peppers
1 cup pizza sauce
½ cup low fat mozzarella cheese
Add your favorite pizza toppings

How to Make it

Slice the peppers lengthwise, and clean out any seeds. Place 1 tbsp. of pizza sauce in each pepper. Top with mozzarella cheese and your favorite pizza toppings. Bake at 350° for 10 minutes, or until cheese is melted.

Mini Sweet Greek Poppers

Ingredients

2 lbs. Mini Sweet Peppers
1 cup Greek yogurt
1 cup low fat mayonaisse
½ cup feta cheese
¼ cup red onion, chopped
¼ cup cucumber, shredded
1 tbsp. black olives, pitted and chopped
Salt and pepper to taste

How to Make it

Cut Mini Sweet Peppers in half lengthwise, clean out any seeds and set aside. Combine all remaining ingredients in a small bowl, and mix well. Fill each pepper with 1 tbsp. of the mixture and enjoy!

Capri Salad with Balsamic Glaze

Ingredients

8 oz. Mini Sweet Peppers
4 oz. fresh mozzarella cheese
8 basil leaves
3 tbsp. Balsamic glaze

How to Make it

Cut the Mini Sweet Peppers down the middle lengthwise, and remove any seeds. Stuff each pepper with mozzarella cheese. Slice the basil leaves into thin strips, and place on top of the stuffed pepper. Drizzle your balsamic glaze over the top, and enjoy!

Mini Sweet & Green Bean Salad

Ingredients

1lb. Mini Sweet Peppers, sliced
2 cups snipped green beans
1/2 cup onion, chopped
1/4 cup apple cider vinegar
2 tbsp. olive oil
1 tsp. garlic, minced
Salt and pepper to taste

How to Make it

Plunge snipped green beans into boiling water for a few minutes-- chill immediately. Place green beans in a bowl and add Mini Sweet Peppers, onions, garlic, apple cider vinegar and olive oil. Mix well. Add salt and pepper to taste.

How to Make it

In a medium bowl, toss the Mini Sweet Pepers in the olive oil and add your favorite seasoning. Place the mini sweet peppers on the kabob skewers. Pre-heat the grill to medium high temperature. Cook the skewers for approximately 5-7 minutes or until you achieve desired texture.

Ingredients

8 oz. Mini Sweet Peppers, whole or sliced
1 zucchini, cut into 1” cubes
1 yellow squash, cut into 1” cubes
1 small eggplant, cut into 1” cubes
8 oz. mushrooms
2 tbsp. olive oil
Italian seasoning or your favorite seasoning
Salt and pepper to taste
Kabob skewers

How to Make it

In a large bowl, mix vegetables with olive oil and your choice of seasoning, to taste. Place the Mini Sweet Peppers and other vegetables on the kabob skewers. Pre heat the grill to medium- high temperature. Cook the kabobs for approximately 5-7 minutes or until you achieve desired texture. Serve vegetables on the kabobs or take them off and serve in a bowl.

Mini Sweet Spanish Rice

Ingredients

1 lb. Mini Sweet Peppers, sliced
2 cups rice, cooked
2 tbsp. low sodium taco seasoning
1 tbsp. olive oil
1 tbsp. cilantro, chopped
Salt and pepper to taste

How to Make it

Sauté the Mini Sweet Peppers on medium heat for 5 minutes. Add the taco seasoning and cooked rice, stir well for 2 minutes. Last, add the chopped cilantro and salt and pepper to taste.

Mini Sweet Pepper Pesto

Ingredients

1 lb. Mini Sweet Peppers, chopped
30 basil leaves
6 garlic cloves, minced
¼ cup parmesan cheese, shredded
¼ cup pine nuts
¼ cup olive oil
1 lb. whole wheat pasta, cooked
Salt and pepper to taste

How to Make it

Place Mini Sweet Peppers, basil leaves, garlic, parmesan cheese and pine nuts in the bowl of a food processor. Mix in food processor on chop/mix until ingredients are finely chopped and mixed well. Or you can also chop ingredients finely with a knife and mix well in a bowl.

Add the pesto to the pasta-this dish may be served hot or cold.

Mini Sweet Chicken Tacos

Ingredients

8oz. Mini Sweet Peppers
1 cup chicken, cooked, and shredded
1 cup black beans
½ cup mozzarella cheese, shredded
1 tbsp. chili powder
Salt and pepper to taste

How to Make it

Cut Mini Sweet Peppers in half, lengthwise, and remove any seeds. Place ½ tbsp. of shredded chicken and ½ tbsp. of black beans into each pepper half. Next, top each pepper evenly with cheese and chili powder. Bake at 350° for 10 minutes, or until cheese is melted.

Mini Sweet Lasagna

Ingredients

2lbs. Mini Sweet Peppers
1 lb. mozzarella cheese, shredded
1 ½ cups tomato sauce
Salt and pepper to taste

How to Make it

Cut the mini sweet peppers down the middle lengthwise, and remove any seeds. Flatten the peppers out with your hand and make a layer in the bottom of an 8 x 8 pan. Next, layer half of the sauce and cheese. Repeat a layer of mini sweet peppers and one more layer of sauce with cheese on top. Cover the pan with aluminum foil and bake in the oven on 350° for 30 minutes. Then, remove aluminum foil and bake for another 30 minutes. Take lasagna out of the oven and let sit for 15 minutes before serving.
